Pumpkins, scientifically known as Cucurbita pepo, are nutrient-rich fruits native to North America and part of the gourd family. They grow on vines and rely on insect pollination, especially by bees. Pumpkins are packed with beta-carotene, fiber, and antioxidants, making them a healthy food choice. Environmentally, they support soil health and are useful in crop rotation. Culturally, they’re famously carved into jack-o’-lanterns during Halloween—a tradition rooted in Celtic folklore and adapted by Irish immigrants in the U.S.A. The carving process also triggers oxidation and microbial activity, causing the pumpkin to decompose more quickly.
